LGA 2011 vs. LGA 2011-3

Hey Guys,
I am in the midst of configuring a one node redundant esxi host for a point of sale, terminal server, exchange, SQL, VDI, and an intranet web server. I definitely need some feedback before i pull the trigger on the purchase.
Intended Equipment (if you have any recommendations feel free to criticize)
8 x 2 terabyte 12gb/s sas drives in raid 10
LSI Raid Controller 12gb/s with BBU and cache vault
2 redundant power supplies
64GB RAM (4 x 16 or 8 x 8 ) ?? i am not sure..
2 x Intel e5 2640 v3
Supermicro MOBO
I cannot make a decision whether to go with w 2011-3 socket Procs or 2011.. Reliability is key here so im not sure if i should go with new tech or stay with the older gen stuff.
Also, any good motherboard recommendations?
Thanks in advance web hosting talkers.
regards,
M.

I can't comment on this, the 1st Supermicro LGA 2011-3 box I got recently has 4 DIMM location failed at DOA.
The Intel e5 2640 v3 is a bit larger than v2, the v2 does not fix on 2011-3 motherboard.

Do you remember the model # of the motherboard that had the 4 dead DIMMS?
