Is there any reason to have separate IP's for NS1/NS2,and each individual domain?

Each domain should have a separate IP address if you need SSL enabled on it. NS1 and NS2 should ideally be located in two independent data centers. Then they will have two different IP addresses. If your both name servers are on the single server (which is not advisable if you have multiple servers) then there is no difference whether you'll assign the same IP address to both of them or you'll assign two different IP addresses.

in addition, some registrars may not allow you to register new domain if NS1 and NS2 are resolved to the same IP.

as a very rough guide to whether a DNS hosting org are doing things right, expect them to have two name servers which aren't in the same /24, i.e. on IP address a.b.c.X and a.b.d.Y. Whilst some ISPs do funky routing so that two servers on similar IPs might be in different locations, it's a very bad sigh when the name servers on are sequential IPs, i.e. a.b.c.d and a.b.c.d+1! use traceroute to see if that gives any clues.
